Ripping hot pan, Vegetable oil in, wait until shimmers. Heavily seasoned Salt and Pepper on the steak. Into the pan do not touch, for med rare on 1 inch steak about 3 min per side 2 inch steak 6-7 min a side.
Take out let rest for 5 min. Slice nice thick slices. Finish with some kosher or sea salt and a drizzle of good olive oil.
