Ingredients

  • 1 ½ cups day old rice
  • 3 gloves of garlic
  • Large knob of fresh ginger
  • One large Holland pepper seeded
  • ¼ cup of raisins or currants
  • Hand full of fresh cilantro
  • Crushed peanuts or hazelnuts
  • Canola oil
  • One large spring onion chopped
  • One egg

Sauce:

  • 6 tablespoons soy sauce
  • 6 tablespoons soy sauce
  • 4 tablespoons brown sugar
  • One clove of garlic crushed
  • Teaspoon grated ginger
  • Teaspoon sesame oil
  • Blend all together and check for flavor, you should be hit with the sweet first then it should roll into the salty

Directions

Combine the ginger, garlic, holland pepper and raisins in a food processor and pulse until you have a fine chop.

Now this is all going to happen quick so have everything ready to go. In a very hot pan add canola oil to coat the bottom and when it starts to smoke add the garlic, ginger pepper mix and make sure its evenly coated and let sit until we achieve something called “wok hay” this is when everything comes together and goes to another level because of the heat. We will start moving that mixture around right before it starts to brown.

Now once you can smell and see that the rawness is cooked out add about 1 ½ cups of rice and stir fry around until it is mixed nicely. Now add the sauce leaving a little behind, stir around… taste the rice, do you taste sweet then salty or does it need more sauce. Now why stirring add a fresh egg stirring as you add it to incorporated it into the rice. You should not see the egg anymore but it’s there and you will taste it in the dish. Now add some of the spring onion mix in and the rice should be fairly dry with all the sauce absorbed so it’s ready to plate.

Put into a bowl, garnish with some more spring onion, crushed nuts and fresh cilantro. I also drizzled a little chili sesame oil on top and that is it!

This should be a flavor explosion with the garlic and ginger permeating through your head. This was a perfect way to start to the day and if you are watching your carbs having this in the morning is the best as you will have the day to work it off.

Ingredients

  • Fresh sushi grade salmon 8oz
  • Half an onion finely chopped
  • Clove of garlic grated
  • Olive oil
  • Juice of one lime
  • ½ teaspoon Smoked paprika
  • Tablespoon of miram
  • Handful of chopped cilantro
  • ½ teaspoon of wasabi
  • Pinch of fresh or dried chilies

Directions

Cut the salmon into little chunks and put in the fridge.

Now in a small pot sweat the onions, garlic and chili and smoked paprika in a little olive oil for about 3 min.

In another bowl combine the lime juice, miram, wasabi and chopped cilantro now mix together and add it to the cooled onion and garlic mixture. Make sure it’s cooled down and add the salmon to it and very carefully toss the salmon to coat evenly.
Now refrigerate for 5 min or several hours.

When ready to serve use little bruschetta’s or pita chips and I used a little homemade mango chutney and sauce the plate first, then place the bruschetta on top, now a spoonful of the salmon ceviche and garnish with watercress or any green of your choice.

Now taste! This will blow you away and is perfect for parties. If you want to make it finger food just put the mango chutney on the toast then the salmon ceviche…perfect!

This is perfect for summer and its 83 degrees as I write this so it was perfect late night snack for me.

Ingredients

  • 8 oz salmon filet
  • Handful Fresh green bean with the ends trimmed off
  • Red onion cut into quarters and just using one layer at a time
  • one clove chopped garlic
  • 1/4 cup Heavy cream
  • Fresh red chili
  • 2 cups Chicken stock
  • handful Fresh basil
  • Soba noodles
  • 2 tablespoon Curry powder
  • Canola oil for frying

Directions

Start out by making the curry sauce: Take two tablespoons of curry powder add it to a little canola oil and cook it out for a few min. Then add two cups of chicken stock and a little water. Now cook this for at least 30 min to get the rawness out of the curry powder and add ¼ cup of heavy cream. Let simmer and reduce while you prepare the rest of the dish.

Now hot pan canola oil and sauté the beans, onion, garlic and chili until starting to sweat nicely then take out set aside in a warm oven 225 degrees.

In the same pan cook your salmon filet season it with salt and pepper first and pan fry it each side until done about 3-4 min a side. Add this to the oven with the veg.

Now let’s make the crunchy garnish for the top which is not a garnish as it’s an import element of the dish. Take a few soba noodle and with a pot with some canola oil about 325 degrees and fry them for about 15 seconds until they lose all their moisture and get golden , set aside.

Now to plate, place the beans and onion on the plate followed by the salmon, I would break it up into two pieces, now place some fresh basil on the right hand side and put the fried soba noodles on the salmon. Now finish by spooning the curry sauce around the beans and on the bottom of the plate. Don’t pour it over the food but sauce it on the plate and that should do it.

Beautiful, low carbs healthy and F ing delicious …I couldn’t wait to eat mine!

Ingredients

  • Salmon Filet cut into one inch cubes
  • peeled and thin sliced cucumber
  • 1/2 cup Rice Wine Vinegar
  • 1/2 teaspoon sugar
  • plain yogurt and cilantro for garnish

Tandoori Paste

  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon cayenne pepper
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cardamom
  • 1/4 teaspoon ground nutmeg
  • kosher salt to taste

Directions

Start by combining all the ingredients for the tandoori paste in a bowl and mix until thoroughly incorporated. Taste for seasoning and adjust you may like more garlic or salt it is up to you.

Next prepare the cucumber garnish  by taking thinly sliced cucumber and soaking them in mixture of rice wine vinegar and sugar and keep chilled until use

Now take your salmon and put in a bowl with a couple tablespoons of the Tandoori paste and get it coated evenly. Now a little oil in a pan and place in the salmon  making sure they don’t touch and into a 450degree oven for about 3-5 min until the Tandoori is just starting to get a little fat bubbling though it from the salmon.

Take out and rest for a min then lay some of the chilled cucumber on a plate and place the pieces of salmon in a nice pattern. finish with a small dollop of yogurt and a single cilantro leaf.

That’s it each bite a full fledged perfect combination of flavors that keep well at room temp so good for parties and get togethers.

Ingredients

  • one pound firm tofu or chicken
  • 1/2 cup chicken stock
  • 2 tablespoons brown sugar
  • 2 tablespoons fish sauce and soy sauce

Curry Sauce

  • one onion
  • 5 cloves of garlic rough chop
  • 3 or 4 holland chillies
  • large knob of fresh ginger
  • 1 tablespoon ground Tumeric
  • 2 lemongrass stalks outter leaves removed and cut into pieces
  • grapeseed oil
  • One cinnamon stick and 2 star anise

Additional

  • juice of half a lime
  • fresh cilantro
  • rice for serving
  • kosher salt and pepper
  • one cup half and half or coconut milk

Directions

Start by combining all the curry paste ingredients into a food processor , blitz and drizzle in a little grapeseed oil in until its a paste.

In a hot pan with some grape seed oil (or vegetable oil) drop in the paste and start cooking it out for a few min. Now add the turmeric and continue cooking.

Cut up the chicken and tofu into bit sized pieces and season with salt and pepper, add to the paste and continue cooking for 5 min until just cooked. Now add the rest of the ingredients to the pan, sugar, cinnamon , coconut milk, lime juice, fish and soy sauce, chicken stock  and  cook uncovered for about 45 min or until the sauce has reduced to a good thickness . Make sure to taste and adjust the flavors to your liking. Maybe a little more sugar or fish sauce it all depends on you.

To serve skim off any excess oil from the surface. Plate with some rice (I used brown as it is so much better for you remember white rice is basically sugar to your body) and finish with some fresh chopped chili for extra heat and some fresh cilantro.
