Jerk Chicken Marinade

Ingredients

  • 1 onion, chopped
  • 1/2 cup chopped green onions
  • 1/2 teaspoons dried thyme
  • 1 teaspoon salt
  • 2 teaspoons sugar
  • 1 teaspoon ground allspice
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon black pepper
  • 1 habanero or Scotch bonnet (very hot), or jalapeno (not so hot)
  • 2 tablespoons soy sauce
  • 1 tablespoon cider vinegar
  • 1 tablespoon vegetable oil or a little more if sauce is to thick
  • 3 cloves garlic chopped

Directions

This is very simple, combine all the ingredients into a food processor and blend until a smooth paste. You will want this  to marinade on your chicken for at least three days. Now I know this seems like a long time but make sure it’s completely covering your chicken in a plastic bag and turn a few times a day while in the  fridge.

When ready to cook it bring it to room temp about 30 min or so sitting out.  Cook it on a hot grill turning often, if using thicker pieces of chicken once you have cooked the outside finish it in a 375 degree oven for 15-20 min.  Serve with some fruit slaw and lots of hot sauce.
