Now to assemble cut the tomato into ¼ inch size pieces scatter on the plate, followed by scattering the walnuts, then plate 3 fried goat cheese balls as shown in the photo, followed by the walnuts, pancetta and finish with the chives then spoon the dressing over and ENJOY!

This one will bring a tomato salad to a whole new place. Perfect light lunch of make a half portion for a starter.

]]> Start by combining the capers, mustard, garlic, salt, Worcestershire sauce and olive oil in a bowl and using a spoon mash it into a paste. Now add the spicy mayo and the scallion followed by the ground Kobe beef.

Mix well together and taste for seasoning. Now you can mold this into a circle free form or use a mold like I did. I formed the meat in the square molds, I topped one with the Tobiko and one with the chopped chives. I used two pocky poles to secure the two sections together and placed some micro greens in like a zen garden. I finished with the bruschetta and some big fat finishing oil! Man, this was so gooood!

Ingredients

  • one apple I used braeburn apple
  • your favorite sharp cheese I used Manchego
  • honey
  • crisp bread

Directions

Start by cutting your apple and cheese in one inch rectangles about 1/8 inch thick. Now push one end against a large knife and trim one side so you get a nice even shape.

Plate them one piece of cheese, one apple repeat as you can see if the photo. Drizzle some honey on top of the apples and cheese.

Now take some of the apple and grate it to make almost apple sauce and place a few small dollops on the apples and cheese. Now follow by finely grating some of the cheese on top of that.

Serve with a piece of crispy flat bread makes a perfect after dinner cheese course or a nice starter.

Ingredients

  • 3 cups chicken stock
  • 1 cup crushed tomatos or chopped fresh
  • 5 cloves of garlic chopped
  • knob of ginger chopped
  • one fresh chili chopped
  • one small onion chopped
  • 6 oz of your favorite firm whitefish cut into cubes
  • olive oil
  • one can rinsed chick peas
  • handful fresh basil chopped
  • kosher salt and pepper

Directions

Start by sweating the , onion, chili, garlic, ginger and chick peas in some olive oil with kosher salt and pepper until you just start to get some color on the onions.

Now add the tomato and cook for about 3 min until it is coating the chick peas. Now add the the rest of the ingredients including the fish as we want it to break down and become a part of the soup.Cook for about 45 min checking for seasoning and adjusting as needed.

Enjoy with some crusty bread for a perfect lunch!

Ingredients

  • 5 cherryystone clams
  • 4 large shrimp
  • 1/2 cup diced chorizo sausage
  • olive oil
  • knob of butter
  • sliced scallions
  • toasted crusty bread

Directions

Start by washing you clams to make sure they are clean, do the same for the shrimp shell off tails on clean out the digestive track (sh%^t sack really). and butterfly  the shrimp so it sits up in the pan.

Using a large pan olive oil in the bottom then arrange the clams and shrimp like I did i. Now sprinkle the diced Chorizo sausage around and into a 400 degree oven. After 5 min add the knob of butter. Roast until the clams pop open and take out right away.

Add some sliced scallion and eat with some nice crusty bread. You will want to sop up all that lovely broth the clams have made so so good!

Ingredients

  • 4 baby eggplants

Filling

  • 1/2 pound ground beef or lamb
  • one cup chopped walnuts
  • one cup chopped onions
  • 2 cloves of garlic chopped
  • one cup of cherry tomatoes or chopped tomato
  • the scooped out insides of the 4 eggplants
  • teaspoon of cinnamon
  • oilve oil and a knob of butter
  • kosher salt

Bechamel Sauce

  • 5 tablespoons unsalted butter
  • 5 tablespoons AP Flour
  • 1 1/2 cup whole milk use hot milk for the recipe
  • one egg yolk
  • pinch of grated nutmeg
  • tablespoon grated sharp dry cheese
  • kosher salt to taste

Directions

First you need to prepare the eggplants by cutting off the top  third of each eggplant (lengthwise) and then scooping out the seeds and as much filling as you can. Leave about 1/4″ wall all the way around and be careful not to puncture through the skin  (see photo). Once all of them are cleaned and prepped, set them aside and prepare the filling.

In a hot pan, add the olive oil, knob of butter, ground beef (or lamb), walnuts, chopped onion, garlic, tomato, cinnamon  and a pinch of kosher salt. Cook everything together for about 10-15 min until the mixture comes together and thickens. Set aside to cool slightly.

Next, prepare the bechamel sauce by starting with a roux which simply combines the butter and flour together  in a sauce pan. Using a whisk, make sure that both are mixed well together and there are no lumps. Allow this to cook for a few minutes and then begin adding the hot milk into the roux a little at a time until it is all incorporated.

Remove from the heat then add a pinch of salt, the nutmeg and grated cheese and whisk together again. Add a little of this  milk mixture into the egg yolk to temper it (bring it up to temperature), and then pour this back into the pan with the rest of the sauce.  Continue to whisk until the mixture thickens and then check again for seasoning. Once thickened, set aside but keep this mixture warm.

Take each baby eggplant and spoon in your meat filling leaving a little indentation in the middle as you can see in the photos. Place them into your baking dish and then generously pour the bechamel sauce on top of each one and bake in a 400°F oven until the bechamel sauce is bubbling and golden brown on top, about 10 minutes or so.

Ingredients

  • 1 boneless ribeye steak I used a flank steak but recommend a Rib Eye
  • kosher salt and pepper
  • 1/2 bottle of good red wine
  • 1 cinnimon stick
  • some grated nutmeg
  • 1/2 orange peel and all
  • 1 teaspoon sugar
  • 5 or 6 cloves

Directions

Start by making the marinade by combining the wine, cloves, orange, , sugar  and cinnamon stick in a pot and let it steep for about 30 min at a low simmer. Now take off and cool to room temp. Now take your rib eye  steak and put it in the marinade for up to a week if not at least 2 days. It will take this amount of time to have those flavors get in there. Now before you cook it take the marinade and steak and let it come to room temp for about an hour at least before you cook it.

Now take the steak out and shake off any excess marinade and season it on both sides with salt and pepper. Get your cast iron pan on high heat and let it get really hot and with no oil put the steak in and don’t touch it. Cook it on the first side for about 2  min depending on the thickness, turn it over and finish for about a 1-2 min,  it should have a really nice crust on it. take out and let it rest for at least 5 min this will continue to cook it and should be around medium to mediun rare.

Slice it on the bias and this steak is ready for you!

Ingredients

    Tuna burger:

    • 1 pound Fresh tuna sushi grade
    • ½ cup chopped scallions
    • 1 1/2 tablespoon honey
    • 1 1/2 tablespoon whole grain mustard

    Asian slaw:

    • 4 tablespoons soy sauce
    • 4 tablespoons rice wine vinegar
    • Pinch of sugar
    • Teaspoon of Sesame seeds
    • One teaspoon sesame oil.
    • Fresh cilantro
    • 2 cups of your favorite shredded coleslaw veg.
    • 1/2 teaspoon wasabi powder or if you have it fresh wasabi

    Directions

     

    Make the slaw dressing by combining all the dressing ingredients and chill for a bit for flavors to meld. Mix into your favorite slaw mix when ready to use. You can buy packaged coleslaw mix or what I like to do is I take stems of broccoli and shred them until they look like spaghetti and add some Julian carrots as well as some red cabbage.

    Chop the tuna until it’s a fine dice, now add the mustard, honey and scallion. Form into patty and chill for an hour to set them up.

    Put this all together heat your grill to a very hot temperature, we are only going to sear the outside of the tuna burger and leave it very pink on the inside. You can cook them all the way through but you want it like a seared tuna steak. Put some canola oil on the patty and season with salt and pepper and put on the hottest part of the grill for about 60-90 seconds on the first side and about 60seconds on the second. This should be enough to give it that nice grilled flavor.

    Now to assemble your burger, toast a bun that is not too hard like a chiabata won’t be very good use a regular hamburger bun will work just fine. Put some of that wasabi mayo on the bottom bun, now place your tuna patty on top. Take a healthy amount of the broccoli slaw place that on top of the patty followed by some fresh cilantro. Now put some wasabi mayo on the top bun as well and whola!

    Your done…eat this baby with a cold beer :)

    • handful toasted walnuts
    • one cup rendered pancetta
    • Panko bread crumbs
    • fresh chopped chives

    Dressing:

    • 50/50 olive oil and balsamic vinegar blend together

    Herb Goat Cheese

    • one cup fresh goat cheese
    • one tablespoon olive oil
    • any fresh herbs of your choice chopped finley and blended with the goat cheese to taste I used chives

    Ingredients

    • 2 tablespoons mirin
    • 2 tablespoons sake (may substitute dry vermouth or white wine)
    • 4 tablespoons mellow white miso (reduced sodium, if available)
    • 3 tablespoons agave nectar
    • 4 Japanese eggplants, stem end trimmed and cut in half lengthwise
    • toasted sesame seeds
    • sliced green onions, for garnish

    Directions

    Place the mirin and sake in a small saucepan and bring to a simmer over medium heat.

    Simmer for about 2 minutes to allow some of the alcohol to cook off. Then add the miso and stir until smooth. Stir in the agave nectar, reduce the heat to very low, and continue to cook, stirring occasionally, while you broil the eggplants: brush the cut sides of the eggplants with the sesame oil, if desired. Put the eggplants cut-side down on a baking sheet and place under the broiler of your oven for about 3 minutes, checking often to make sure that they do not burn.

    Turn them over, and cook for another 3 minutes or until the tops are a light to medium brown. Do not burn! (If your eggplant still isn’t tender all the way through, try baking it–no broiler–a few more minutes; then proceed with the recipe.)

    When the eggplants are tender, top each one with the miso sauce and put them back under the broiler until the sauce bubbles up–this should take less than a minute, so watch them closely.

    Serve hot, sprinkled with toasted sesame seeds and green onions.
