This one will bring a tomato salad to a whole new place. Perfect light lunch of make a half portion for a starter.

]]> Start by putting the half the cream, sugar, salt, orange liquor and vanilla in a pot on medium-low heat stirring until it is almost at a boil. In a bowl break up your 70 percent coco bar (I used Ghirardelli) and when the cream mixture is scalding pour it over the chocolate and lets it sit for 5 min then whisk it together until it is all incorporated. Now take the rest of the cream and whip it until it is nice peaks and put in the fridge until ready to use.

Now in another bowl, over a pot of lightly boiling water start whisking the egg yolks. This should take about 5 min or so keep whisking until they are a light yellow and when you pull the whisk out it runs off very thick like a ribbon (called the ribbon stage). Now take your still warm chocolate mixture and add a little bit to the egg yolks while stirring, add a little or the mixture to temper the eggs (not to make scrambled eggs) then pour that all into the bowl of chocolate mixture and whisk together and add the crushed Almonds and finally fold in the whipped cream careful not to break it down.

Now you can use any mold you like I had a small bread pan. Whatever mold you are going to use start by using a little vegetable cooking spray and spray on the inside. Then line that with some cling film this will make it easy to unmold when its ready. Now pour that mixture in and cover with some more cling film and put in the fridge overnight.

To serve to pull the cling film out of the mold if it sticking submerge the bottom into a bowl or hot water for 30 seconds and it should come out. Now you have your loaf or Semifreddo and cut it into whatever serving portions size you want. Garnish with anything, more chocolate sauce, whip cream, nuts anything your heart desires. You can see I used some homemade caramel and some crunchy surgery Won Tons.

Its foolproof don’t be scared of screwing it up you should give this a try it is just a great summer dessert.

Ingredients

  • one pound or so compari tomatoes or any tomato of your choice
  • handful toasted walnuts
  • one cup rendered pancetta
  • Panko bread crumbs
  • fresh chopped chives

Dressing:

  • 50/50 olive oil and balsamic vinegar blend together

Herb Goat Cheese

  • one cup fresh goat cheese
  • one tablespoon olive oil
  • any fresh herbs of your choice chopped finley and blended with the goat cheese to taste I used chives

  • Melted bittersweet chocolate, for dipping

Directions

Preheat the oven to 350° and line a baking sheet with parchment paper or these cool silicon mats which I use and are readily available now in most cooking stores.

In a standing electric mixer fitted with the paddle, beat the butter with the sugar at medium speed until creamy. Add the eggs, vanilla seeds and rum and beat until smooth. In a small bowl, whisk the flour with the cocoa powder, baking powder, salt and cinnamon. Add the dry ingredients and mix until incorporated.

On a lightly floured surface roll the dough out to about 1 ¼ inch thick. Brush the log with the egg white.

Bake the log for about 25 minutes, until the top is cracked and glossy and slightly firm to the touch. Let the log cool slightly.

Using a sharp chef’s knife or serrated knife, cut the logs into 1/3-inch-thick diagonal slices.
Arrange the slices on the baking sheets and bake for about 20 minutes, until dry.

Let cool completely. Partially dip the biscotti in the melted chocolate and sprinkle lightly with chopped walnuts. Let cool for an hour and then enjoy!

  • 1 cup fresh cherry’s
  • Lime juice
  • 2 teaspoons Sugar

Directions

Take cherry’s and sugar, put them in a mortar or in a large glass and take something like a wooden spoon and muddle them until the juice is starting to come out and add a little splash of lime juice.

Now take some crushed ice and pour on top and ENJOY!!

Ingredients

  • 1 tablespoon butter
  • 1/4 cup sugar (and a little more for ramekin)
  • 1 large egg
  • 6 tablespoons half and half
  • 3 tablespoons all-purpose flour
  • 1/2 cup raspberries
  • Vanilla bean ice cream (or a flavor of your choice)
  • Fresh raspberries

Red Wine Raspberry sauce:

  • 1/3 cup good red wine
  • about 10 raspberry’s
  • one tablespoon sugar

To Finish up:

  • Confectioner sugar
  • Crushed toasted almonds

Directions

Heat oven to 400 degrees, butter two 5 1/2-inch gratin dishes and dust with sugar.
Whisk egg until frothy and add sugar, half and half, and vanilla extract, mix to combine.

Add the all-purpose flour and whisk very well. Divide the raspberries into the baking dishes and pour the batter over the berries.
Bake for 20 to 30 minutes until golden brown and the middle is set.

Now let cool and turn gratin dishes upside down to remove the clafouti.
Now take your cooled red wine sauce and paint some on the bottom of a plate. Now cut out two squares of clafouti and stack on top of each other. Dust with confection sugar, now a scoop or quenelle of vanilla ice cream and scatter some toasted crushed almonds around……..this is really a good one…man it was so good..enjoy kids!

Red Wine Raspberry sauce:
In a small sauce pan combine 1/3 cup good red wine and about 10 raspberry’s and one tablespoon sugar reduce at medium heat until syrup like then strain through a sieve.

Ingredients

  • Package egg roll wrappers
  • 1 cup fresh strawberries
  • ¾ cup whipping cream
  • Fresh vanilla bean
  • 2 tablespoons caster sugar
  • Diced frozen strawberry’s
  • Strawberry coulis
  • Fresh basil

Directions

Cut the egg roll into 1 ½ inch strips make sure you have 3 strips in total.
Now deep fry them until golden and set aside to cool.

Now make the whipping cream and if you can use fresh vanilla bean in it helps lift the flavor up. Now cut your strawberries into slices and take one large strawberry and dice it finely and put in the freezer. Take another ½ cup of strawberry’s, into a hot pan with sugar and make a coulis, when you have strawberry jam take out and blend until smooth.

Now mix the cut strawberry’s with the whipping cream and we can assemble. Start by dusting the egg rolls with icing sugar, now take the coulis and paint it on the bottom of the first eggroll strip and place on the plate. Now a layer of the whip cream and strawberry’s and repeat one more time finishing with last strip on top.

I finished with some whip onto the plate and I dropped the frozen strawberries around with some torn up basil. I finished with an egg roll circle on top which I made my wrapping and egg roll wrapper around a ring mold and baking it for ten min.

This was my first attempt at this and It tasted really great and a good way to celebrate the strawberry. You can make this with puff pastry as well instead of the egg roll wrappers. Just roll the pastry out thin, bake it between two sheet trays to keep it flat and from rising and cut out in the same shape as the egg roll.

Have fun with this one it was a blast to make.

Ingredients

  • Good Quality Vanilla Ice cream
  • Good quality Mango Sorbet
  • ½ cup Caster Sugar
  • 2 egg whites
  • Cream or tarter
  • Industrial strength blow torch

Vanilla Ice Cream:

  • 4 egg yolks
  • 1/2 pint milk
  • 1/2 pint double/heavy cream
  • 4 oz sugar or caster sugar
  • 1 vanilla pod (scored down the middle)

Directions

You will need either a ring mold or you can use a ramekin to shape the ice cream mold.
Now we are starting to layer the ice cream and sorbet.
I start with the vanilla ice cream, I then pack in some mango sorbet finish with another lawyer of the vanilla ice cream.
I pack it tight and then put it back into the freezer to set.

Now take 2 eggs separate the whites from the yolks now in a bowl with the egg whites add a pinch of cream of tartar or a few drops of lemon juice as this will help the egg whites get the stiffness . With a whisk or use electric beater until they start to stiffen up, now add the caster sugar and keep whisking until they are forming a nice peak and you can turn the bowl upside down for 5 sec and nothing falls . Put the egg whites into a piping bag and now remove the mold from the ice cream by heating up around with a blow touch and pulling it off.

Now quickly pipe up the sides and finish with little rosettes on top. Take your blow touch again and lightly brown the egg whites.

You can also take some over proof rum and light it in a pan and pour over.

That should do it! Eat , make yummy sound noised and enjoy!

For homemade ice cream:

Pour the milk into a saucepan and bring slowly up to boiling point but DO NOT LET IT BOIL.
Place the vanilla pod into it and leave to infuse for about 20 minutes.

In a bowl, beat and mix together the egg yolks and sugar until thick. Carefully remove the vanilla pod from the pan of milk and scrape out the seeds into the milk. Pour the milk into the mixture of egg yolks and sugar whilst stirring. Pour the mixture back into the pan and heat gently, stirring until the custard thickens – DO NOT BRING TO THE BOIL OR IT WILL PROBABLY CURDLE.

When you can see a film form over the back of your spoon it’s time to remove the saucepan from the heat. Leave to cool. When the custard base is cold stir in the cream.
Transfer the whole mixture into an ice cream maker and freeze for 20 min. Put in container and let set overnight.

Ingredients

  • 4 eggs beaten
  • Cinnamon
  • Caster sugar
  • One cup fresh squeezed orange juice
  • Olive oil

Directions

With a pan at medium heat put a little olive oil in the bottom and let heat up.
Now put a small ladle of the egg and swirl around to cover the bottom with a thin layer of the egg. Once it starts to set sprinkle on tablespoon of sugar on it evenly and a dusting of cinnamon.

Slide out onto a baking dish and repeat with the remaining eggs making sure to add the sugar and the cinnamon on each layer.

Now with the orange juice pour it over the top of the egg stack and put in a 375 degree oven and baste the eggs with the juice as it reduces down to a nice thick syrup about 15 min or so.

Now take out and you can fold it in half and cut into pieces and drizzle some of the orange syrup over it to be rustic or you can do what I did and cut out a round place in a bowl and dust with come icing sugar and with a blow touch Brule the sugar like you would crème Brule.
I finished with some more strands of the eggs and drizzled the orange syrup over the top.

This will be a unique dish to server your guests that’s not high in fat or carbs and simply amazing…give this one a try kids!
