You can add some Chipotle Tabasco for some smokey flavor. Some habanerao pepper sauce to spice it up. (add during the simmering process)

Servings

Ingredients

  • one can of sweetened condensed milk (you can use fat free as well but it is just not as good)
  • oven proof large pot
  • an oven
  • water

Directions

Ready..OK here we go. Submerge a can of sweetened condensed milk into a pot with water making sure it is completely  covered. Now into a 350 degree oven for 3 1/2 hours. Take out and cool.

Take lid off and you have Toffee.

Ingredients

  • 2 pound bag of spinach chopped
  • One chopped onion
  • Tablespoon chopped garlic
  • ½ cup cream cheese
  • ½ cup half and half
  • ½ cup sharp white cheddar or a good melting cheese like fontina
  • Grated parmesan cheese
  • Grated nutmeg
  • Panko bread crumbs
  • Olive oil

Directions

Start by sweating the onions and garlic in some olive oil until they are soft and translucent, now add your spinach and a little kosher salt and pepper.

The spinach will start to wilt quickly, now add your half and half and cream cheese and stir until it is melted and the mixture is bubbling.

Now add the cheddar cheese and mix until it is incorporated, check for seasoning and add some grated nutmeg if you like.
Continue to cook until it reduces so a nice thick consistency it should be tight not loose or runny.
Now put in an oven proof serving bowl and grate some parmesan cheese on top and finish with some panko breadcrumbs.

Bake in a 400 degree oven until it is golden on top and bubbling.

Serve with tortilla chips or for something different some matzo crackers.

Ingredients

  • 5 tomatoes
  • One onion
  • 2 jalapenos
  • 5 cloves garlic
  • Juice of 3 limes
  • Kosher salt to taste
  • 3 tablespoons olive oil
  • One cup or a good bunch of cilantro
  • 2 tablespoons chipotle Tabasco

Directions

Start by grilling or roasting 3 of the tomatoes, one jalapeno and the onion. Once they get a little char add to the bowl of the rest of the ingredients. Blitz with hand blender and check for flavor, more salt more lime juice it’s all to your taste. Chill for at least an hour for the flavors to develop. Great for chips, tacos fish meats just about anything.
