Now to assemble cut the tomato into ¼ inch size pieces scatter on the plate, followed by scattering the walnuts, then plate 3 fried goat cheese balls as shown in the photo, followed by the walnuts, pancetta and finish with the chives then spoon the dressing over and ENJOY!

This one will bring a tomato salad to a whole new place. Perfect light lunch of make a half portion for a starter.

]]> Start with your bacon or pancetta and cut it into lardons about 1/2 inch thick (see photos for example) and begin rendering them in a pan (frying) Start with a little olive oil in the pan to help them out and cook until just getting to the crispy stage. Drain on a paper towel and set a side.

Cut your tomato into a large dice about 1/2 thick you should have about 9 pieces for each plate approx one large tomato should do. Now do the same with your blue cheese try to make them the same size and the tomato dice you can see the example in the photo. Now the shallot, cut it into rings not to thin you want some bite from them (use the outside ring most likely)

For each plate you will need:

9 piece of tomato dice and shallot rings

5 pieces each of bacon, blue cheese and basil leaves

To plate start with the tomato dice and alternate one up and one down as you can see in the photo. Now add the bacon starting at one end and place them in the empty squares on one side, now do the same for the blue cheese on the other side of empty squares. Top each piece of tomato with a shallot ring and finish with five pieces of basil leaves across the top.

Spoon a little olive oil over the tomato and finally a little fresh cracked pepper. It’s the perfect bite every time, spear the tomato, bacon, blue cheese and some basil onto your fork and go to town.

Ingredients

  • 3 cups spring salad mix
  • 2 cups fresh cilatro
  • one grilled corn on the cob remove all kernals with a knife
  • 8-10 medium shrimp cleaned and cut into 3rds
  • tablespoon butter
  • 1/2 teespoon Old Bay seasoning
  • 6-8 large all natural taco chips
  • fresh lime

Dressing

  • one cup of my salsa https://vault.bennydoro.com/time-machine/tm-002/chef/recipes/simple-salsa/
  • one tablespoon good mayo

Directions

Start by making the dressing by combining the salsa and the mayo, mix well and keep in the fridge.

Now prepare the shrimp, in a saute pan add a tablespoon of butter and about 1/2 teaspoon of Old Bay (you can also sprinkle it on the shrimp) and saute at medium heat for about 2 min just until the shrimp are cooked then remove from the heat and set aside leaving the shrimp in the butter and Old Bay.

Now take the salad greens and the cilantro and roll them tight together like a cigar and using a knife cut once every inch or so. This will make a nice texture and it will be more like a chopped salad. Now add the corn to the greens and crunch in the taco chips. Add about half the dressing on the outside of the bowl and begin mixing add more dressing if you prefer. Now plate in the center of a large bowl and now add the shrimp around the outside. This help the greens from going soggy and lets you get some shrimp and add some of the fresh vibrant salad to you fork. Finish with a squeeze of fresh lime and your good to go. I promise this will not disappoint unless your one of those strange people who does not like cilantro…..strange :)

Ingredients

  • 2 cups trimmed fresh green beans
  • 1 shallot finely sliced
  • 1 cup of finely sliced red cabbage
  • teaspoon fresh oregano chopped or 1/2 teaspoon dried oregano
  • 1/3 cup chopped cilantro
  • 1/2 cup grated feta cheese
  • fresh cracked black pepper

Dressing

  • 5 tablespoons olive oil
  • 2 tablespoons red wine vinegar

Directions

Start by steaming your trimmed and cleaned green beans for 5 min. If you don’t have a steamer then shallow boil them for 5 min until they are tender and set aside.

Make the dressing just combine the olive oil and the red wine vinegar and whisk together.

To assemble put the green bean into a bowl followed by the cabbage, cilantro, shallots, oregano then finish with the grated feta cheese.

Using a spoon add some of the dressing around the edge of the bowl start with a few tablespoons and add to your taste. Mix together gently check for seasoning adding fresh cracked pepper and salt of needed.

That’s it now go enjoy some green beans!

Ingredients

  • 6 cups mixed greens
  • 2 chicken breasts, grilled and sliced into thin strips
  • 1 cucumber, sliced thin
  • 1 red onion, cut into small dice
  • 1 fresh mango, cut into small dice
  • kosher salt
  • fresh cracked black pepper

Dressing:

  • 1 cup balsamic vinegar
  • 1/4 cup rice vinegar
  • 1/4 cup granulated sugar
  • 1 teaspoon sesame oil

Other components:

  • 8 (6 inch) egg roll wraps cut in half then deep fried.
  • 4 ounces sweet Thai chili sauce
  • 4 ounces hazelnuts , toasted and chopped
  • 1 tablespoon sesame seed, toasted
  • one carrot, peeled, sliced into match sticks
  • spring onion cut into small pieces

Directions

Start by taking a large won ton wrapper and fry it until golden brown and let cool. Now paint on a lawyer of sweet chili sauce and finish with some toasted black sesame seeds and set aside.

Place the green salad mix, chicken, cucumber slices, red onion, and mango, into a large mixing bowl. Season the ingredients with salt and pepper. Whisk together the balsamic vinegar ,rice vinegar, granulated sugar, and sesame oil. Drizzle the dressing into the bowl with the salad ingredients, and gently toss together.
Build the salad in each serving plate with alternating layers of salad mixture, a crispy glazed egg roll wrapper, more salad mixture, another crispy glazed egg roll wrapper and then the remaining salad mixture.

Finish with the hazelnuts and more sesame seeds, spring onion and the carrots on top.
This is a show stopper salad that has huge flavor, crunch and a feast for the eyes….enjoy!

  • one pound or so compari tomatoes or any tomato of your choice
  • handful toasted walnuts
  • one cup rendered pancetta
  • Panko bread crumbs
  • fresh chopped chives

Dressing:

  • 50/50 olive oil and balsamic vinegar blend together

  • one cup fresh goat cheese
  • one tablespoon olive oil
  • any fresh herbs of your choice chopped finley and blended with the goat cheese to taste I used chives

Ingredients

  • 12-16 oz of tuna filet for 3-4 portions
  • black or white sesame seeds
  • Vegatable oil

Tomato White Bean Salad

  • one can of chick peas or white beans your preference
  • 2 cloves of garlic chopped
  • one large tomato small dice
  • handful of fresh basil chopped once
  • 1/2 cup of crumbled feta cheese
  • 1 tablespoon rice wine vinegar
  • good glug of olive oil
  • one cup of charred corn on the cob you can use boiled corn as well

Directions

Start by making your Tomato White Bean salad, you can use chick peas or white beans of your choice. I like the small white beans myself. Put everything into a bowl and add a good glug of olive oil and add just enough rice wine vinegar to give it some lightness. Mix well and into a fridge.

Coat your tuna with vegetable oil then roll it in your sesame seed mix making sure to really push the seeds into the flesh. Now hot pan vegetable oil sear each side of the tuna for about one min. Take out of pan and let rest for a min.

To plate put some of the Tomato White Bean salad on the bottom of a plate, now cut the tuna into nice thick slices as you can see in the photos and lay on top of the salad. Finish with some micro greens and a little touch of olive oil.

Ingredients

  • One small grilled radicchio
  • 3 gloves chopped garlic
  • One small grilled red onion
  • One cup chopped watercress or parsley
  • 1/3 cup olive oil
  • 1/3 cup balsamic vinegar
  • Kosher salt
  • Fresh cracked pepper
  • 2 cups cannellini beans drained and rinsed to remove the starch
  • Grilled 4-6oz salmon filet

Directions

Grill the radicchio, onion and salmon until the vegetables are soft with nice grill marks and the salmon is fully cooked through.

Put the beans in a bowl and chop up the radicchio, garlic, chopped grilled onion and parsley. Now add olive oil the balsamic vinegar and mix adding salt and pepper to taste.

Finally pull apart the salmon into chunks and mixing carefully check for seasoning and enjoy!

Simple delicious and very healthy for you. Enjoy… I can see summer around the corner

Ingredients

  • one pound of cooked shrimp
  • 2 cups shredded napa cabbage
  • one large tomato chopped
  • juice of one lemon
  • 3 tablespoons good mayo Japanese Mayo works great
  • 3/4 teaspoon Old Bay Seasoning

Directions

Start with your cooked shrimp and give them a rough chop so they are all about the same size pieces. now everyone into the pool, add the tomatoes, Napa cabbage, lemon juice, Old Bay and the mayo (start with less mayo and add a little at a time to not OVER MAYO)

Mix together well and check for seasoning and into the fridge until you are ready to serve.

Use a good potato roll is what I like for my bread, put a little butter on both sides and into an oven to toast it up. You can use any bread you like but I like the sweetness a potato roll brings to the table.  Alternatively you can just add this salad to some more greens and eat it as a salad on its own. I finished with some micro greens and some Tabasco sauce. Works for me!

Ingredients

  • one small fennel bulb
  • one apple of your choice fuji, macintosh work well
  • 2 cups of your favorite greens
  • feta cheese

Apple Cider Dressing

  • one cup olive oil
  • 2 tablespoons apple cider vinegar
  • tablespoon of honey
  • 1/2 teaspoon brown mustard
  • pinch of kosher salt
  • tablespoon of water helps thin out the oil so its not so cloey on your mouth

Directions

Start by making your dressing. Combine all the ingredients and whisk well. Check for flavor and adjust to your liking.

Cut the apple and fennel into matchstick pieces and if not using right away put them in some water with some lemon juice not to brown.

Mix with your favorite greens and drizzle with some of the dressing to taste. Finish with a few thin slices of feta cheese and some of the fennel fronds from the bulb.
