Ingredients

  • 8 Large Eggs
  • One Cup Chopped Onion
  • Small Clove or Garlic Chopped
  • 6-8 teaspoons Ricotta Cheese
  • chopped fresh basil
  • 2 cups chopped tomato
  • Olive Oil
  • Kosher Salt and Pepper

Directions

Medium size pan on medium high heat add a splash of olive oil, salt and pepper then the onion, garlic and tomato and start to cook down for about 3-4 min until the tomatoes start to break apart.

Whisk the eggs in a bowl adding some fresh cracked pepper and a little salt. Pour into the pan making sure there is even distribution of the tomatoes. Now put a few dollops of the ricotta cheese around (think where you will cut slices so everyone will get some of the cheese) . Let cook until the bottom is set and you can see a crust forming around the sides.

Now into a 375 degree oven to finish cooking for about 10-20 min depending on thickness of the eggs and your oven temp. You will know when its ready the center will have a slight jiggle and it will have a nice crust on the outside.

Take out and drape some fresh basil on top. It will purfume it really nicley and add great flavor. Add a dollope of sour cream and your favorite hot sauce.

Great also at room temp so good for parties and leaving out for snacks.

Ingredients

  • 6 eggs
  • 1/2 cup whole milk
  • 2 oz brie cheese cut into small squares
  • good knob of goat cheese
  • 1/2 cup Hijiki
  • one cup chopped Escarole
  • handful leftover crunchy Millet pre cooked just day old
  • olive oil
  • kosher salt and pepper

Directions

This does not get any easier than this, mix all ingredients together in a bowl except for the Escarole. Now in a large pan put about 3 tablespoons of olive oil and bring to almost smoking point on the stove. Now pour in the egg mixture and let the bottom firm up for about a min until you see the eggs bubbling around the side.

Take the escarole and push it into the top of the egg mixture. Season the top with kosher salt and pepper and into a 400degree oven. Cook until you see the top has browned nicely and the olive oil is bubbling around the eggs.

Take out let rest for a few min then loosen it from the pan with a spatula and transfer to a wire rack to let cool for ten min. This allows the oil and flavors to set and the bottom can cool nicely without getting soggy.

Serve with a nice salad or you can put it between two pieces of nice toasted bread and take it on the run with you.

Ingredients

  • one can of strained and rinsed chick peas
  • 1/2 cup grated Manchego Cheese
  • 1/2 cup grated chorizo sausage
  • one shallot sliced
  • one cup tomato puree
  • 4-5 cloves of garlic minced
  • dried chili flakes
  • olive oil
  • eggs one per person
  • kosher salt and pepper

Directions

Start with a large skillet or paella pan as I have, it’s important that the chick peas lay in one layer or so and not stacked up on each other.

Olive oil to coat the bottom of the pan, add the chick peas and shake the pan so they cover the bottom, scatter the shallots and garlic around and season with kosher salt and pepper. Now add the grated chorizo (this give even flavor to every bite) and tomato puree. Give the pan  shake so everything covers evenly and finish with the grated manchego cheese and a few pinched of chili flakes.

Into a 400 degree oven for about 20 min or until the moister has given away and the tomato is become one with the chick peas. To finish crack and egg on top (suggested one for each person) and back into the oven for a few min until you  see the egg whites fully cooked about 2 min.

Serve hot or at room temp, great with some crusty bread.

Ingredients

  • 8 oz filet of white fish flounder, sole, monkfish all work
  • one tablespoon minced ginger
  • one teaspoon minced lemon grass
  • one scallion chopped
  • handful of fresh cilantro
  • juice of one one lime
  • one egg
  • one small chili chopped
  • vegatable oil for frying
  • dash of fish sauce
  • salt to taste

Directions

Combine all the ingredients minus the vegetable oil in a food processor and blitz until a little coarse.

If you want to test the seasoning take a small dollop of the fish paste and quickly saute in a pan and check for seasoning.

In a pot fill at least 2 inches of vegetable oil and heat to 350 degrees. (you can also shallow fry these in a pan about 2 min each side) and using a tablespoon drop a dollop of the fish paste into the oil and fry for about 3-5 min rolling them around often. When a little golden brown take out and drain on a paper towel.

Serve with lime wedge and your favorite sweet chili sauce

Ingredients

  • Salmon belly skin on
  • Kosher salt
  • Fresh cracked pepper
  • REAL maple syrup
  • Lemon

Directions

Trim the salmon belly so you have equal size portions. Now season the skin side with salt and pepper, turn over and drizzle some real maple syrup on the flesh or honey if you have it.

Now carefully drop some kosher salt crystals on the flesh not to many maybe about 50 little pieces. Now put in a pan or a sizzle platter and put in oven at 400 degrees until the flesh is starting to bubble with fat and take on some color.

Take out let rest for a min, plate and serve with some fresh lemon as you will want this to cut the richness as this is over the top snack. That fat is pure omega 3 which is so good for you and taste amazing give it a shot kids!

Ingredients

  • One sliced leak
  • ¼ napa cabbage chopped
  • 5 large shrimp chopped
  • 5 cloves of garlic chopped
  • Small knob of fresh ginger chopped
  • One egg
  • One cup day old rice of any kind
  • Canola oil
  • Tablespoon garlic chili paste
  • Chopped scallions
  • 2 tablespoons golden raisins chopped
  • 3 tablespoon Benny’s stir fry sauce

Benny’s stir fry sauce:

  • 2 cups soy sauce
  • ¾ cup brown sugar
  • 3 gloves of garlic minced
  • Knob of fresh ginger minced
  • Tablespoon plus one teaspoon sesame seed oil
  • Tablespoon toasted sesame seeds
  • ¼ cup rice wine vinegar Blend it all together and adjust to your taste.

Directions

Have everything ready and begin with smoking hot wok add about 3 tablespoon canola oil and as soon as it starts to smoke add the leeks, garlic, ginger and chili and let sit and smoke in the oil for about 30 seconds now add the cabbage and stir, now make a well in the center add the shrimp and let them sit there for 20 seconds or so, now stir and add the chili garlic paste and stir, now add the rice and let sit there for 20 sec until you hear it crack now stir, keep stirring and add the egg and stir it quickly into the ingredients.

Add the raisins and stir, make a well add the stir fry sauce about 2 tablespoons and stir into the ingredients and keep stirring until it becomes a part of the dish and the liquid is very tight.

Plate into a shallow bowl and finish with chopped scallion and sesame seeds.

That’s it, it will rock your taste buds and for those who want pure vegetarian leave out the shrimp. Now go give this a try it’s all in the prep kids!

Ingredients

  • 1 ½ cups day old rice
  • 3 gloves of garlic
  • Large knob of fresh ginger
  • One large Holland pepper seeded
  • ¼ cup of raisins or currants
  • Hand full of fresh cilantro
  • Crushed peanuts or hazelnuts
  • Canola oil
  • One large spring onion chopped
  • One egg

Sauce:

  • 6 tablespoons soy sauce
  • 6 tablespoons soy sauce
  • 4 tablespoons brown sugar
  • One clove of garlic crushed
  • Teaspoon grated ginger
  • Teaspoon sesame oil
  • Blend all together and check for flavor, you should be hit with the sweet first then it should roll into the salty

Directions

Combine the ginger, garlic, holland pepper and raisins in a food processor and pulse until you have a fine chop.

Now this is all going to happen quick so have everything ready to go. In a very hot pan add canola oil to coat the bottom and when it starts to smoke add the garlic, ginger pepper mix and make sure its evenly coated and let sit until we achieve something called “wok hay” this is when everything comes together and goes to another level because of the heat. We will start moving that mixture around right before it starts to brown.

Now once you can smell and see that the rawness is cooked out add about 1 ½ cups of rice and stir fry around until it is mixed nicely. Now add the sauce leaving a little behind, stir around… taste the rice, do you taste sweet then salty or does it need more sauce. Now why stirring add a fresh egg stirring as you add it to incorporated it into the rice. You should not see the egg anymore but it’s there and you will taste it in the dish. Now add some of the spring onion mix in and the rice should be fairly dry with all the sauce absorbed so it’s ready to plate.

Put into a bowl, garnish with some more spring onion, crushed nuts and fresh cilantro. I also drizzled a little chili sesame oil on top and that is it!

This should be a flavor explosion with the garlic and ginger permeating through your head. This was a perfect way to start to the day and if you are watching your carbs having this in the morning is the best as you will have the day to work it off.

Ingredients

  • thin sliced Roast Beef can be from leftovers
  • fresh mozzarella
  • crusty roll

Au jus:

  • pan drippings from roast
  • splash of dry red wine
  • 2 cups warm water
  • 2 tablespoons of Whoshestershire sauce
  • kosher salt to season

Directions

Take the pan  with the drippings from your roast and put it on the stove on medium heat. At least 2 cups of warm water ready. Now when the fat starts to bubble stir everything around and now slowly add the warm water and keep stirring until all the little bits have come off the bottom. Now at this point add the Worcestershire,  dry red wine.  put a splash  of wine in and keep adding until you are happy with the taste about a cup is good

Now keep stirring and let it reduce for a bit keep tasting , do you taste a good beef flavor yet, is there enough salt you have reduced it enough if you are like WOW I can taste that beef like a proper Au Jus. Now when you think it is where you want it to be take that and pass it through a strainer to take out all the little bits and make it a nice clean Au Jus or broth.

Ingredients

  • Left over rib streak or any other cut you have
  • queso fresco cheese
  • Fried onions
  • Left over potato

Directions

Slice the steak thin as you can, do the same with the queso fresco cheese and I also sliced the potato to be the same thickness as the cheese and steak. Just start layering in a mold of your choice.

I started with the potato, then half cheese have steak and continue until you get to the top. I top with some more of the cheese and melt it with a blow torch and finish off with some really nice fried onions and micro greens.

This baby is two bits of steak heaven. Nothing like that perfect bite and this one works perfect for me.
